Absolutely not. Even if I'm from St. Louis, where this sign reigned supreme at Jefferson and Chouteau, long after the shop was out of business. My husband loved this sign so much, we have a framed print of it. The building was torn down, but not before so many of us said, damn, I meant to get a picture of that. http://www.cravescavesandgraves.com/2013/10/st-louis-brain-sandwich.html
Oops. It was Grand and Chouteau, one major n/s route west of Jefferson. I know it says Carr Lane, but that is an alley, and the view from Grand was unobstructed. The joke driving by was always, let's stop and buy some brains!
I went back and checked whether you really meant they killed a cow (and not a steer) and concluded you did mean that, because of the detail about the bull. Plus, you worked on a ranch, so I’m sure you know the difference.
I've been a cook of some degree or another for 25+ years. The kitchen is where my brain thrives & suffers the most; the work, the art... and the pods & politics I devour to keep standing some days. I've done every organ & terrine you've described, except this... off to my long befriended butcher shop!

Why did you include that anecdote about that poor bull in mourning, wtf 😞
I think I was making a point about the inherent brutality of eating meat or maybe was just in a grim ass mood

I don't think I'll eat now until Monday.
I had to look up nuritional facts. Low in fat, protein and packed full of cholesterol.
2169.2mg per 3oz serving. An egg has 186mg, and that's high.
