I just tried using mayo instead of margarine for the outside to fry on and ... it’s equally good.

Not many people know this, but mayonnaise is just repurposed low-friction ball bearing grease, which explains its flavor.

Irrespective of the fact I just made that up, it is true in its essence.

Butter or turn off the grill!

Love your exaltation on this humble sandwich; I teach writing to ESL students as a volunteer for the Los Angeles Public Library literacy program....and would like to use excerpts from your grilled cheese piece as a writing sample for the students. Perhaps you might contemplate how cheese is made. It comes from an industry where just about all the male calves are slaughtered not long after birth.
