I just tried using mayo instead of margarine for the outside to fry on and ... it’s equally good.

Not many people know this, but mayonnaise is just repurposed low-friction ball bearing grease, which explains its flavor.

Irrespective of the fact I just made that up, it is true in its essence.

Butter or turn off the grill!

Love your exaltation on this humble sandwich; I teach writing to ESL students as a volunteer for the Los Angeles Public Library literacy program....and would like to use excerpts from your grilled cheese piece as a writing sample for the students.
